Carrot Cake

Ingredients

  2. 3 cups grated carrots
  3. 2 cups sugar
  4. 1 1/2 cups Mazola oil
  5. 4 eggs (unbeaten)
  6. 3 tsp cinnamon
  7. 3 cups sifted flour
  8. 3 tsp baking powder
  9. 2 tsp baking soda
  10. 1/4 tsp salt
  11. 1 cup walnuts chopped
  12. Frosting
  13. 1 Tbs butter
  14. 1 large package Philadelphia cream cheese
  15. 1 cup powdered sugar
  16. 1 cup chopped walnuts for garnish
  17. 1 tsp vanilla

Steps

    Preheat oven to 350. Grate carrots. Squeeze out all liquid using a cheesecloth or clean dish towel.

    In a large mixing bowl, mix carrots, sugar, and oil. Next, beat in eggs. Lastly, mix in dry ingredients.

    Bake for 50 minutes - 1 hour at 350 degrees.

    Frosting: Mix softened butter, vanilla, and cream cheese. Gradually add powdered sugar. Frost cake. Add nuts on top.
