Super lemon cookies

  1. 100 g all-purpose flour
  2. 15 g fresh lemon juice
  3. 5 g lemon skin
  4. 50 g sugar (powdered sugar recommended)
  5. 1 g salt
  6. 70 g unsalted butter

    Place 75g unsalted butter under Room temperature and wait for it to soften. Then add 50g sugar and 1g salt. Mix and scramble

    Add 15g lemon juice. Sift 100g flour (all-purpose or pastry flour). Mix well

    Cut 5g lemon skin into pieces (tip: cut only the yellow part) and add to the bowl

    Mix well

    Place the mixture onto a cutting board. You can make it into either a cylinder or a cuboid

    Wrap it with plastic wrap and place in freezer for 40 min

    Cut into pieces and bake in 350 F oven for 15 min
